TechnologyTAAG Cuts Spoilage Detection From 5-7 Days to 52 Hours at a Large Beverage Company
TAAG's partner, a global beverage manufacturer, needed a faster and more comprehensive way to control the risk of spoilage in its finished products. The traditional plating methods it had used until then took between 5 and 7 days to deliver a result, a timeframe that left product waiting for release for almost a week with limited visibility into its real microbiological status. That wait not only created inventory pressure at high-volume plants, but also exposed the brand to quality failures that tend to show up only at the point of sale or in the hands of the consumer, such as package swelling, turbidity or off-flavors derived from the metabolic activity of spoilage microorganisms.
Microbiological spoilage in beverages is caused by a group of microorganisms that are particularly resistant to traditional control barriers: acidophilic bacteria tolerate the low pH levels commonly used as a safety barrier, spoilage yeasts and molds can proliferate even in products with low water activity, and preservative-resistant yeasts, known in the industry as PRY, manage to survive the chemical preservation systems designed specifically to inhibit them. Detecting these four groups required, with culture methods, running several tests in parallel, each with its own selective medium and its own incubation time.
TAAG implemented a high-throughput multiplex PCR solution that identifies the main beverage spoilage microorganisms in a single molecular workflow, consolidating into one assay what previously required several culture-based tests run separately. The result was a reduction in analysis time to approximately 52 hours, that is, between three and five days less than the original process, without losing the ability to distinguish between the different risk groups relevant to the product.
For TAAG, the case confirms that spoilage control, and not only pathogen control, is an area where multiplex molecular detection can drastically shorten the time between sampling and a product release decision, with benefits that translate both into inventory management and into brand protection against returns and quality complaints.
