Lettuce, spinach, berries and other fresh products are usually eaten raw, which removes the thermal barrier that, for other foods, destroys most pathogens before consumption. Any contamination that occurs in the field, during harvest or during packing reaches the consumer intact.

Where does the contamination come from?

Irrigation and process water

Water contaminated with fecal matter — of animal or human origin — is one of the most well-documented routes of introduction for Salmonella, Shiga toxin-producing E. coli and parasites such as Cyclospora cayetanensis in leafy green crops and berries.

Soil and wildlife

Contact of the crop with contaminated soil or with droppings from nearby wildlife is another route of introduction that is difficult to fully control in open fields.

Post-harvest handling

Washing, cutting and packing are additional critical points: wash water shared between batches can become a vehicle for cross-contamination if it is not properly maintained and renewed.

Why washing does not eliminate the risk completely

Unlike a smooth surface, the porous structure of a leaf or the rough skin of certain products can harbor microorganisms in folds and crevices that are inaccessible to a simple rinse. Washing reduces the microbial load, but it does not replace a comprehensive control program starting at the source.

Surveillance and rapid response

Given the absence of a thermal barrier, the fresh produce industry relies heavily on traceability to narrow recalls precisely, and on rapid detection methods — such as PCR — to shorten the time between sampling and a release decision, given the short shelf life of these products.
