A risk profile different from other foods

In alcoholic beverages, the focus shifts to lactic and acetic acid bacteria (Lactobacillus, Pediococcus, Pectinatus) and wild yeasts such as Brettanomyces, which pose no health risk but significantly alter the flavor, aroma and stability of the product — serious economic consequences in an industry where sensory profile is the foundation of the brand.

When does pathogen risk actually appear in beverages?

Pathogenic risk reappears strongly in minimally processed beverages — unpasteurized juices, bottled spring water — or when contamination occurs after heat treatment, for example from a packaging line with poor hygiene.
