What is Listeria monocytogenes?

A pathogenic bacterium able to survive and multiply under conditions that inactivate other microorganisms, including refrigeration temperatures. It is the species of greatest public health relevance within the genus, associated with listeriosis.

Why is it especially risky?

Ability to survive in plant environments

It can establish itself in environmental niches — drains, equipment, wet surfaces — and persist for long periods if it is not controlled through rigorous microbiological surface sampling.

Ready-to-eat (RTE) foods

The greatest risk is concentrated in RTE products that receive no subsequent heat treatment: soft cheeses, cured meats, smoked products, prepared salads.

How is Listeria detected in a laboratory?

Traditional culture

Selective pre-enrichment, isolation and biochemical or serological confirmation; this can take several days and be expressed in CFU depending on the type of analysis.

Molecular methods
