Switzerland Recalls Raw Beef Tartare in Portions Due to Escherichia coli Detection

Switzerland's Federal Food Safety and Veterinary Office (FSVO) published, in its list of public recalls and warnings and in the RecallSwiss app, following the manufacturer's notification of October 6, 2026, the recall of raw beef tartare packaged in individual 70-gram portions, in a 20-portion format, due to the detection of Escherichia coli. The recall affects a single batch of the product.

The notice identifies Escherichia coli without specifying whether it is a Shiga toxin-producing strain (STEC), so that information alone does not allow the level of risk to consumers to be determined. In raw minced meat, eaten without cooking, even generic strains are an indicator of fecal contamination and of hygiene failures during slaughter or grinding, and STEC, which can cause bloody diarrhea and hemolytic uremic syndrome, are found mainly in cattle. The product, moreover, is usually eaten raw and without a pathogen-elimination step.

Those who have the product should not eat it and may return it to the point of sale, where the price is refunded. As a general recommendation for raw meat, keep it refrigerated, consume it within the indicated period, and do not give it to young children, pregnant women, older adults or immunocompromised people. Hand and surface hygiene, and keeping raw meat separate from other foods, prevent contamination from passing to other dishes.

For manufacturers of minced meat and raw meat dishes, the finding is a reminder that batch verification of the finished product is the last control before consumption without cooking. The Specio 1.3 kit from TAAG detects Escherichia coli by real-time PCR with melting curve analysis, with food and surfaces among its validated matrices and meat products among its industries. The association is indirect: the notice does not specify the strain and does not describe analyses performed with the kit, and the kit does not identify STEC strains on its own.

Specio 1.3 detects Escherichia coli in food and surfaces, and meat products are among its industries; the association is indirect because the notice does not specify the strain, raw minced meat is not named among the matrices, and the kit does not identify STEC strains on its own.
