Product RecallFrench Producer Recalls Its Entire Line of Marinated Poultry Over Salmonella
A French company announced on September 21 on RappelConso the recall of its paprika-marinated chicken drumsticks, after in-house testing detected the presence of Salmonella. As a precautionary measure, the company extended the recall to its entire marinated poultry production line, not only to the specific lot where the finding was confirmed. The notice reports no associated illnesses at the time of its publication.
That the finding came from in-house testing (and not from a consumer complaint or a state inspection) is the most relevant part of the case from a risk management standpoint. It means that the plant's internal verification system worked as it should: it detected the pathogen before a clinical case forced the chain to be reconstructed backwards. The decision to extend the recall to the entire line, rather than limiting it to the positive lot, also suggests that the company could not rule out a source of contamination shared among different lots on the same marinating line, probably in the equipment or the brine used.
Marinating poultry introduces a specific risk variable: the marinade liquid, if it is reused or not handled with proper segregation between lots, can become a vehicle for cross-contamination that a simple surface wash does not eliminate. Unlike a piece of raw, unprocessed chicken, where the risk is limited to the surface of the meat, a marinated product adds a processing step where the pathogen can be redistributed through the liquid to an entire production lot.
For TAAG, this is a textbook case of early detection working as it should: a finding through in-house testing, before mass distribution or a clinical case, is exactly the result sought by a well-designed Salmonella spp. monitoring program in meat and poultry plants. The decision to widen the recall to the entire line, although it implies a higher cost for the company, is the right response when the origin of the contamination within the marinating process cannot be isolated with certainty.
