Product RecallFrance Recalls Beef Minced to Order at a Calvados Butcher Counter Over Salmonella
On September 28, RappelConso published the voluntary recall of ground beef minced to order at the traditional butcher counter of a hypermarket in the Calvados department, in Normandy. The product was sold between September 14 and 18, and the recall originated from a non-compliant sample of steak haché in which Salmonella spp. was detected. The authority asked consumers not to eat the meat, and to return or destroy it, and offered refunds to buyers.
The notice reminds consumers that salmonellosis appears between 6 and 72 hours after consumption, with diarrhea, sudden-onset vomiting, fever and headache, with more intense symptoms in young children, pregnant women, immunocompromised people and older adults. If no symptoms appear within seven days after consumption, the authority indicates that it is not necessary to consult. It also notes that cooking to a core temperature of 65 °C destroys the bacterium.
Ground beef concentrates the microbiological risk for a mechanical reason: grinding distributes contamination that was originally only on the surface of the piece throughout the mass, and an undercooked hamburger leaves the interior at temperatures that do not inactivate Salmonella. At a counter where meat is minced to order, equipment, boards and hands can also transfer bacteria between pieces of different origins during the day.
For TAAG, this case shows that a point of sale that minces its own meat is a link with real microbiological risk and not just a distribution channel: a periodic sampling program of minced meat and the surfaces of the mincer and the counter makes it possible to detect Salmonella before an official control forces the withdrawal of an entire week of sales.
