France Recalls Savoyard-Style Pork Paupiettes After Salmonella Detection

RappelConso, France's official product recall portal, published on October 7 the recall of Savoyard-style pork paupiettes, a stuffed meat roll sold raw, in plastic trays with a protective atmosphere and unbranded. The reason is the detection of Salmonella. The product was sold in stores of several retail chains nationwide between September 30 and October 5, and the recall affects a single lot.

The notice asks consumers to stop eating the product, return it to the point of sale or destroy it, and states that a refund is available. Digestive symptoms usually appear between 6 and 72 hours after consumption, and anyone who has them should consult a doctor. The notice reminds that cooking the product to 65 degrees destroys the bacterium and that, if no symptoms appear in the following seven days, there is no need to see a doctor.

Raw stuffed pork is a matrix that requires care, because manual preparation and tying of the piece spread any contamination to the interior, where cooking is harder to guarantee. Salmonella is one of the most frequent pathogens in pork and poultry, and its presence in raw product makes it necessary to cook the piece well and to avoid cross-contamination of boards, knives and hands in the home kitchen.

For TAAG, the episode reinforces the value of verifying Salmonella in raw meat and in processed meat products on the line and before releasing the lot, when it has not yet reached points of sale. Real-time PCR delivers results in a few hours and makes it possible to decide whether to hold a lot, which reduces the window in which a contaminated product can reach the consumer's table.
