Product RecallFrance Recalls Bouchées à la Reine and Vol-au-Vent From a Single Manufacturer Over Listeria monocytogenes
RappelConso, the French government's official recall platform, announced on September 24 the recall of chilled bouchées à la reine in 150-gram packs sold under a supermarket chain's own brand in ten regions of the country, due to the presence of Listeria monocytogenes. The following day, September 25, three more notices were added for the same reason: bouchées à la reine in boxes of nine, bouchées in a two-piece 300-gram format, and veal sweetbread vol-au-vent in boxes of nine, marketed across France in hypermarkets, butcher shops, delicatessens and catering services.
All four notices share the same health mark, which indicates that all the products came from a single manufacturing establishment, and cover two different batches. These are chilled products ready to eat or to reheat, and the authority asked consumers not to eat them, to destroy them or return them to the point of sale, and to consult a doctor in case of fever, headache or muscle aches, noting that the incubation of listeriosis can extend up to eight weeks.
Bouchées à la reine combine a puff pastry shell with a creamy filling of meat and sauce that is prepared cooked and then cooled and packed. That post-cooking step is the critical point for Listeria monocytogenes: a recontamination during cooling, filling or packaging is protected inside a chilled product with a shelf life of several days, a condition in which the bacterium can keep multiplying at refrigerator temperature.
For TAAG, the fact that a single manufacturer generated four recalls under different brands and channels within 48 hours confirms that Listeria control in prepared meals must focus on the environment of the post-cooking area (surfaces, filling and packaging equipment) and not only on testing the finished product, because a single focus in the plant multiplies across all the formats that leave that line.
