Germany Recalls a Cured Game Sausage Over Shiga Toxin-Producing Escherichia coli Detected in Official Sampling

The German federal food alert portal lebensmittelwarnung.de published on October 9 a warning for a cured game meat sausage, made and sold by a small family farm in the state of Thuringia. The cause of the recall is that, during official sampling carried out by the control authorities, Shiga toxin-producing Escherichia coli was detected, also known by the acronyms VTEC, STEC or EHEC, depending on the clinical context in which the term is used.

The product was sold exclusively within Thuringia, through the farm's own direct sales and a local shop. The company asked those who bought it not to consume it and to return it directly to the manufacturer. The notification was issued by the state authority and was published and updated on the same day, so there are no later extensions of its scope.

The portal explains the health risks. Infection with Shiga toxin-producing E. coli usually causes diarrhea and abdominal cramps within approximately a week of consumption. In infants, young children, older people and people with weakened defenses it can progress to more severe forms, with bloody diarrhea, and in rare cases, especially in young children, it can lead to acute kidney failure. Anyone who has eaten the product and has severe or prolonged symptoms should see a doctor and state that an EHEC infection is possible; on the other hand, it is not recommended to consult if there are no symptoms.

The case illustrates a known risk of raw cured sausages: as they do not undergo a heat treatment that eliminates pathogens, safety depends on the quality of the raw material, process hygiene and correct curing and drying. Game sausages made on a small scale, like this one, are under the same official oversight as industrial ones, and the finding came from an authority check and not from a consumer complaint. The recall follows the German practice of communicating each case through the joint portal of the Federation and the states, which gathers dozens of notices per month.

Microorganism:
STEC (Shiga toxin-producing E. coli) / Escherichia coli
Matrix:
Raw cured game meat sausage
Related kit:
Ampliora 3.9 (F39) E. coli STEC, E. coli O157:H7 and Salmonella spp. (PCR en tiempo real - Mila)

Ampliora 3.9 detects STEC, E. coli O157:H7 and Salmonella spp. and its datasheet validates it in ground beef, so it covers the microorganism in the notice. The association is indirect because cured game sausage is not among the kit's validated matrices and the news item describes a finding by the authority, not an analysis performed with the kit.
