France Recalls Ground Beef Over Shiga Toxin-Producing E. coli in Four Eastern Departments

On September 25, RappelConso announced the recall of a batch of pure ground beef with 20% fat content, packed in 500-gram trays, after a laboratory test detected Shiga toxin-producing Escherichia coli (STEC) in the product. The meat was sold between September 12 and 20 in stores of a discount supermarket chain in four departments in eastern France: Doubs, Bas-Rhin, Haut-Rhin and the Territoire de Belfort.

The authority reminded consumers that STEC can cause, within days of consumption, sometimes bloody diarrhea, abdominal pain and vomiting, and that between 5% and 8% of cases progress to serious kidney complications, especially in children. It asked consumers not to eat the product, to return or destroy it, and to consult a doctor if symptoms appear; if no symptoms appear within 15 days of consumption, there is no need to consult.

Because the batch sold had already reached its use-by date when the notice was published, the main risk lies in meat that consumers may have frozen at home. Ground beef is one of the highest-risk matrices for STEC because grinding distributes throughout the mass a contamination that in a whole cut stays on the surface, and because medium-cooked preparation of burgers or minced meat does not reach the internal temperature needed to inactivate the bacterium.

For TAAG, the case confirms that detecting STEC in ground beef depends on systematic sampling of the product before release, since a shelf life of just a few days leaves very little margin between the laboratory result and sale to the consumer: when the test arrives after the batch has been marketed, the recall can only reach the product left in household freezers.
